PW - Shredded Pork

I told the husband that we were going to use our crock pot this week. I am trying to make things a bit easier at dinner time. He found this recipe for Spicy Shredded Pork and jalapeno slaw on PW's website.  If you're ever needing to buy a pork butt (shoulder is the same thing) - go to Costco. The price per pound is great and you normally get 2 within the package. This allows us to freezer seal the extra and put it away for next time. Which the hubs will probably get out the smoker this Spring and cook it up.

This recipe was super easy - we put everything together like PW recommends in her recipe. We set the crock pot at 630 this morning and by 530 we were ready to eat. Yes we eat that early :). 

I also whipped up her jalapeno cilantro slaw but ended up not adding the jalapeno or the cilantro. I wasn't feeling it.This meal is great for a crowd and is super easy! Get out those crock pots people and put them to use!  the picture below is from PW's website - yes i stole the picture because  I failed to take pictures of my own. I hope she doesn't sue me. Yes, mine did look like this!

PW - Spicy Shredded Pork (really isn't that spicy but the chipotle peppers in adobo sauce do turn it up a notch). 


PW Cilantro Jalapeno Slaw - really good even without the C&J. Here you can see how she put the slaw on the sandwich. We didn't do it - we used it as a side item.

fresh start

The  older I get the more and more I remind myself of my mom. Some people would not admit to that about their own mothers. But for me, I have no issues :). Growing up my mom would always change the furniture around in our living room. There are about 3 different ways to have the furniture placed - they have a great long living room and lots of space to work with. If I remember right she did this at least 3 times per year.  As a kid I would change my bedroom furniture around. Luckily my parents didn't care because normally the task would include a thorough cleaning of my room.

Today was one of those days. I woke up on the wrong side of the bed. I was out of sorts, the husband was driving me bonkers (he was doing nothing really). But everything was getting on my nerves. After a few errands and lunch, I decided I needed a change.

I rearranged our bedroom furniture. I must have had tons of energy to burn off because once I got to moving the furniture and  cleaning out drawers, I felt a ton better. I think I understand now that my mom changed the furniture to gain a new perspective and to make a fresh start. Even the hubs said the room feels better and he liked the arrangement.

I think I might tackle the living room next weekend to keep the momentum going.
